This recipe is as simple as they come. In fact, I’m not sure this would even qualify as a “recipe”. It only has three main ingredients and it can be prepared ahead of time and refrigerated until you’re ready to pop it in the oven. It’s nothing fancy, but it has bacon… so it tastes good. I guess it’s called bacon wrapped chicken rolls?? Hmm.. Good enough.
The lineup:

Boneless chicken breasts
Chive and onion cream cheese
Bacon
Garlic powder, salt and pepper
First, preheat oven to 425 degrees. Layer the chicken between plastic wrap and pound each breast until they are an even thickness. Salt and pepper the chicken and sprinkle with garlic powder to your liking.
Add a spoonful of the cream cheese to the middle of each breast.

Roll the chicken up and place seam side down on a slice of bacon, fold each end of the bacon over the breast and place in a baking dish. – We love pepper so I added a bit more at this point.

Bake at 425 for 25-30 mins then switch your oven to broil and cook an additional 3-5 mins. This will help to crisp up the bacon a bit. Make sure to keep an eye out so that it doesn’t overcook.
The “sauce” this dish makes is delish, so spoon it over the chicken when served.
If all goes well, you will end up with this:

(Minus the sweet potato and spinach of course) 😉
Mmmm….. bacon.
